Manufacturing of the Gruyère AOC
Destination Gruyère offers you the opportunity
to spend some time at the alp with a typical farmers familiy who
produce the Gruyère AOC. You have the possibility to stay
a full day, spend a night in the farm or spend just a few hours
with them!
Breakfast at the Alps farm
The breakfast is certainly the most important meal
on the Alps. Very early in the morning the farmer wakes up, call
his cows to be milked. After collecting our white gold, he starts
the process of our AOC Gruyère cheese making ! If you want
to participate in the farmer’s daily routine and don’t
mind for a little walk early in the morning, you are welcome to
join him! Once the main daily job done, the farmer will share with
great pleasure his breakfast with his guests!
A lunch at the Alps farm
Spending the day working in the fields or in the forest, it is suddenly
lunch time! Coming back to his chalet, the farmer will prepare a
good plate of macaronis or a home-made soup!
The manufacturing of the Gruyère cheese
The famous cheese has been manufactured for more than 800 years
and it is still produced in our region today. Every year about 50
farmers living in the Alps of the Swiss French region produce about
400 tons of Gruyère AOC (the annual production is about 27´000
tons). Proud about the distinction AOC (appelation d`origine controlée)
received in July 2001 the farmers cheese-makers would have a great
pleasure to teach you their secrets…well, almost all of them…
